I think the only people that can answer that are the developers of the website. It’s better to contact them directly via one of the channels listed on http://project-osrm.org/
The OSRM instance currently used on osm.org and project-osrm.org is operated by Mapbox and is augmented by their proprietary traffic data, so results will differ from a “pure” profile without traffic data.
