How to tag buildings which have had their function changed?

I would like to ask how to map buildings which have had their function changed from their original purpose.

From the OSM wiki page (Buildings - OpenStreetMap Wiki) it seems that I should tag the original purpose, but I am not sure.

“Please be aware that building tags are always about the building itself, not the current building usage or its user.”

For example how should I map:
World War 2 pill boxes that are now used as summer beach residences.
19th century prison that is converted into a sports complex. Does it make sense to tag it as a prison?

To tag the current use of a building there is building:use
https://wiki.openstreetmap.org/wiki/Key%3Abuilding%3Ause

building:use=residential is already used 500,000 times.
building:use=sport is already used 330 times.

According to the suggestion of @mueschel the tagging would be

building:bunker + building:use=residential

building=prison + building:use=sports_centre

Any value being documented for “building” can be used for “building:use” as well.

I would tag these as:

building = bunker
building:use = residential

The tag amenity=residential doesn’t exist.

That would be:

building = prison
building:use = sports_centre / sports_hall
leisure = sports_centre

Optionally with a name tag.
Again, amenity=sport doesn’t mean anything in OSM.
