Which tag to use for gravestone shops? Should I just type gravestone as shop type, even though it is not one of the default values?

In Germany these are sold by stone masons. You’ll be able to by kitchen counter tops and other things made of stone there, too.
I have no clue how other parts of the world handle this
In the UK they are called Monumental Masons. The key service they offer, which will differentiate them from a stonemason is the ability to carve neat fancy lettering.
There are not a huge number of these, burials are no longer common having been replaced by cremations.
