The shop in question is https://controlairaustralia.com.au/, located about here. I have looked through the values on the wiki for Key:shop, but cannot find an appropriate tag. Could I use shop=cooling, or is there a more common tag that exists?
Probably either Tag:craft=hvac - OpenStreetMap Wiki or maybe https://wiki.openstreetmap.org/wiki/Tag:shop%3Dhvac depending on whether they’re primarily a shop or installers.

Refrigeration can be lumped together with HVAC as HVACR. As =hvac is already being used, there’s no absolute necessity to rename it. Could be considered included, and create eg refrigeration=yes for this.
=cooling doesn’t refer to refrigerating alone, Can include AC and fans.
On the other hand, the commercial-only business may use shop=trade + trade=hvac
