Forgive me if this is common knowledge, but would a node or an area work better for roller coaster attractions? I’m new here, and I’m trying to update theme parks by adding new attractions.

If you have good data (several gpx traces or good aerial images) you can try and trace the coaster.
Setting a node is totally fine, too.

If you are using a node, it would be useful if it is located where the entrance to the attraction is. Try to have a path, corridor or similar way next to it to aid navigation.
Roller coasters and similar rides can be mapped as ways, but it can get very complicated very quickly, especially as many overhead images are taken from an oblique angle and not directly overhead. The higher the object is off the ground, the harder it is for the image processing software to correct it and the greater the distortion. You can also see this effect with tall buildings and power lines.
