Is there a place to request missing tags for new types of features?
Just open a thread and ask people if they know a tagging or what tagging they think would fit. You could also start a proposal if you have a fitting tag.
Other than that, there is the Any tags you like - OpenStreetMap Wiki rule. The wiki article also provides lots of info that might answer your question.
