Is it somehow possible to select for example only bicycle paths from the openstreetmap database and display them or is it only possible to export an entire map?

There are special cycle maps made of OSM data, so that data is as free as openstreetmap. Though it’s not done in the same way as the main site, so you can’t export them. But check them out.
If you are talking about the export tab to export map images then, no, at the moment the only option is to export the map that you can see on the main site…
If you are talking about the data then yes you can use osmxapi to extract only the tags that are relevant for cycle ways. e.g. “highway=cycleway” “cycleway=" and "bike=”. This won’t get you a nice printable map though.
