Please can someone tell me how to change the map labels to English rather than the national language of the area I am looking at?
Assuming you’re talking about the osm.org website, it isn’t possible in the default style. You could try using americanamap.org which lets you specify map language (English by default). The Cycle or Transport Map styles on the osm.org website are also in English but obviously they’re designed for cycling and public transport rather than general purpose.

And if you look for even more “readability” in English or Latin script for all labels where no English name:en tag is set, the osMap renderings in osm-carto style might help.
