I have found this business, Clark Pacific Excavating in Nanaimo, BC, Canada, and I have no idea how to tag it. It is a contractor specializing in activities like rock breaking and excavation. Should I just use “office=construction”, or is there a more descriptive tag that I can use?

In the UK I might refer to something like that as a “groundwork contractor”, but a look through the craft key in OSM not only doesn’t find that, it doesn’t find an obvious alternative. If you’re tagging the office, then office=construction
sounds as good as anything. If you’re tagging the yard where they physically operate from, perhaps something else - have a look at the usage of other tags with landuse=industrial
and usage of industrial, for example.
I’ve had to venture a bit into ATYL territory as I work through my QA queues after I made a big addr:country=USA
→ addr:county=US
edit which caught a lot of the meh-quality SEO-focused additions of various businesses.

is a good approach. I suggest taking a look through Taginfo for craft=*
(linky) and office=*
(linky) to see if anyone came up with something already.
craft=
is for individual crafting. It’s not suitable for all constructions and contractors.
The term I’m familiar with more is “earthworks” , although there’s none other than 3 craft=
used yet. office=construction_company
etc needs to be sorted out.
And I have now added the business in question, having selected “office=construction”.
