Pre-rendered tiles do not suit all needs. However, there is really nothing that prevents showing whatever your want on the map. Try

Change tag and value parameters and see what happens. All the work is done on the server side on demand. And if you would like to download the same data in vector format, it is possible as well

User can even write own style document and send it either with the request or by giving a link to web accessible place. Fot that I do not have a ready example but you can read about it at http://mapserver.org/ogc/sld.html#sld and more from http://www.opengeospatial.org/standards/sld
However, it is slow to render everything on-demand as can be seen by adding some background
