Hello. My main question: how should I tag wikidata to the OSM map? I found that there are 2 main tags: “wikidata” and “subject:wikidata”, but have a hard time figuring out which one to use.

Use wikidata alone if the wikidata item directly relates to the OSM element being tagged. wikidata:subject is probably most often used for things like statues and other artworks where the tag pertains to the subject of the artwork. So Duke of Wellington’s column could have both tags one for the entry on it as an artefact & the other for Duke of Wellington as a subject.
