Just checking - have you had a read of https://wiki.openstreetmap.org/wiki/Comparison_of_iOS_applications#Track_making_features ? That might be a bit out of date, but it might give you some ideas.
If the worst comes to the worst, you can always use a text editor since GPX files are just XML, although I’m not even sure there’s a decent text editor in the iOS world.
