Bonjour,
Ru.
There is a drinking_water
tag that is often used to indicate whether a water source is drinkable.
If the fountain is mainly decorative it might be tagged amenity=fountain
, while more utilitarian ones are more likely to be tagged are more likely to be tagged amenity=drinking_water
or amenity=water_point
In terms of notes there is no standard for what to include, the more hints you can give the better. For very basic additions you can also use Organic Maps or OsmAnd, and of course Android has the fully featured (but somewhat confusing) Vespucci.

Hi,
replying in English as my French is not so active
I am also interested in mapping water fountains and spigots (and other water fountains). On cemeteries, you can generally find water taps and fountains which provide drinkable water or not, and this is very relevant to many map users.
My tagging for these is like this:
amenity=drinking_water (if it is drinkable) and/or
man_made=water_tap when there is a tap (possibility to stop the flow) with drinking_water=no (if it is not drinkable) or drinking_water=unknown when it is unclear.
the amenity=drinking_water tag already implies drinking_water=yes so I do not add it.
I also usually take a picture and upload it to wikimedia commons and tag the picture in OSM with wikimedia_commons=File:…
Additional tags that might come in handy are “access”, “fountain” (if it is a drinking fountain or other fountain), maybe man_made=water_well in some occasions (but not usually on cemeteries).
Regarding drinkabiility, usually there are signs, on cemeteries I often see “not drinkable”, but there are also examples for places where both is provided side as side, e.g. here in Venice.
If you are unsure, you can add “drinking_water=unknown”
